Ingredients:

  • 200g pumpkin (peeled and cut into pieces)
  • 200g glutinous rice flour

  • 100g glutinous rice balls (ready-made, optional)
  • 1.5 liters of water
  • Sweet osmanthus (optional, for garnish)

  • Instructions:

    1. Prepare the Pumpkin Puree:
      • Peel and cut the pumpkin into small pieces. Steam until soft (about 15-20 minutes).
      • Mash the pumpkin into a smooth puree and let it cool.
    2. Make the Glutinous Rice Dough:
      • In a mixing bowl, combine the cooled pumpkin puree with the glutinous rice flour. Knead until a soft, smooth dough forms. If the dough is too dry, add a little water; if too wet, add more flour.
      • Roll the dough into small, bite-sized balls.
    3. Prepare the Red Dates:
      • Rinse the red dates and remove the pits. You can slice them or leave them whole.
    4. Cook the Sweet Soup:
      • In a pot, bring 1.5 liters of water to a boil. Add the red dates and let them simmer for about 10 minutes until they soften.
      • Gently add the pumpkin glutinous rice balls into the boiling water, stirring occasionally to prevent sticking. Cook until the balls float to the surface (about 5-7 minutes).
      • If using ready-made glutinous rice balls, add them to the soup during this step.
    5. Sweeten the Soup:
      • Add sugar to the soup, adjusting to your preferred sweetness. Stir until the sugar is completely dissolved.
    6. Serve:
  • Ladle the sweet soup into bowls. You can garnish with a sprinkle of sweet osmanthus if desired.

Tips:

  • If you like, feel free to add other ingredients like goji berries or lotus seeds to boost the flavor and nutrition.
  • You can also adjust the thickness of the soup by adding more or less water, depending on how thick you prefer it.
